Copy Cat Rubio's Fish Tacos

I love fish taco Tuesday at Rubio's! However, we don't get there very often because of school, work, etc (I guess it's a good thing for our budget). One night I was talking to my sister Lindsay, who also shares of love of fish tacos, and she mentioned that she likes to make similar tacos using fish sticks. These don't require much in the way of cooking, but they have become go-to favorite for busy school nights, and sometimes even lunch.

Rubio's Copy Cat Fish Tacos

Fish Sticks (Michael and I like to buy of them from Costco. They are the best fish sticks. Perfect bread to fish ratio, and nice and moist! Plus the bag lasts us forever- seriously we are still working on the bag we bought in August)
Shredded Cabbage (you can also use shredded iceberg lettuce, but I love the crunch of cabbage. Buy a bag or shred it yourself. We have done both and usually end up just getting the bag to keep it simple.) 
Flour Tortilla (taco size, or burrito size, cut in half- this is what we usually use, since this is the size we like to buy) 
Rubio's Taco Sauce (equal parts of mayo and sour cream, mixed together)
Lemon or Lime juice
Salsa

Cook fish sticks according to package instructions. We always do ours in the toaster oven. Warm tortillas. Spread the taco sauce on tortilla. Place cabbage in the center. Place fish stick on top. Then garnish with salsa and lemon/lime juice, to taste. 

That's it- super simple and delicious!
